Palaka Fermentation LLC is a sake nanobrewery and taproom in development in Fairfax, Virginia, paired with a fermentation-prediction platform built to guide production.

What is Palaka?

The fermentation-prediction platform is used by the brewery and will work as an internal quality-control tool. It shortens the time it takes to scale a recipe from a five-gallon pilot batch to a 300-liter commercial batch, and gives new brewing staff real-time guidance during fermentation instead of relying only on experience. Five sake styles are being developed and refined on a five-gallon pilot system, with recipes evaluated by focus-group tasting panels and adopted based on their feedback. If this sounds interesting to you, contact us.

Junmai

Calrose rice, milled to 70%

A rice-forward, umami-driven style.

Ginjo Sokujo

Titan rice, milled to 60%

A clean, floral style brewed with a standard fermentation starter.

Banana Bread

Omachi rice, milled to 60% · Lalvin 71B yeast

An ester-forward, unpasteurized (nama) style with a fruit-driven aroma.

Yamahai Ginjo

Omachi rice

Brewed with a traditional yamahai starter for added lactic complexity.

Nigori

Calrose rice, milled to 70%

An unfiltered, unpasteurized (nama) style, cloudy in the glass.

Milling percentage refers to how much of the outer rice grain remains after polishing — a lower number means more polishing.

Brewed, poured, and consumed on premise.
